It’s not as universally liked as, say, Mac & Cheese (which will be discussed in more detail later), but that’s because fish (especially raw fish!) takes a little bit of confidence and talent to find decent ingredients for.

It’s only in lesson 9 that we begin to learn about where to find high-quality fish, so this class doesn’t seem like it belongs until much later.

I found the workbook to be a really useful tool, and I painstakingly recorded everything I learned in my workbook during the course so that I could go back to it at a later date.

There was one issue that came to light as a result of this: The workbook does not follow the lesson exactly, so I had to go back and forth between sections while also noting differences in the components’ lists.

Sometimes, the recipe was incomplete or mentioned additional components that were never utilized in the class.
